Pumpkin Pie Energy Bites




Save this recipe which will surely become one of your fall favorites! These festive little Pumpkin Pie Energy Bites are the perfect thing to pop in your mouth when you need a hit of energy and flavor. They also happen to be good for you with a variety of ingredients that provide healthy omega-3 fat, fiber, protein and plenty of vitamins including A, B and C. Even better, they’re super easy throw together. Here’s how…


1. Combine the following in a food processor or bowl of a stand mixer:

  • 1/2 cup almond butter

  • 1/2 cup almond flour

  • 1/3 cup canned pumpkin

  • 2 Tbsp. Maple syrup

  • 2 Tbsp. flax meal

  • 1/4 cup pecans

  • 1/2 tsp pumpkin pie spice

  • 1 tsp cinnamon

  • 2 Tbsp. unsweetened shredded coconut


2. Pulse or mix until thoroughly combined. Roll into 1 inch balls (should make about 20) and place on a baking sheet or plate lined with parchment or foil. Chill for 20 minutes.

3. Place an additional 2-3 Tbsp. Shredded coconut in a shallow bowl and roll each pumpkin bite to coat. Store in the refrigerator for up to 1 week.
